Chorizo and Sweet Potato Roll Ups

Ingredients 

  • 3-5 chorizo deskinned
  • 1 medium sweet potato, peeled and cut into ½ inch cubes
  • 4 tortillas
  • 2 tablespoons oil
  • 2 garlic cloves minced
  • 1 small onion, finely chopped
  • 2 jalapenos fresh, seeded and chopped
  • 1 cup arrabiata sauce
  • 1 cup processed cheese, grated

Method

  1. Preheat oven to 180°C. Grease a casserole with some oil.
  2. Heat oil in a non-stick pan, add garlic and sauté for a minute.
  3. Add onion, mix and sauté till translucent. Add jalapenos, mix and sauté for a minute
  4. Add sweet potato, mix well and cook on medium heat till soft. Add chorizo, mix and cook till they turn brown. Remove from heat and set aside.
  5. Spread this mixture on each tortilla. Fold in the ends and roll up around the filling.
  6. Place these roll-ups in the greased casserole. Pour the Arrabiata sauce over them and top with cheese. Place the casserole in the preheated oven and bake till the cheese melts.
  7. Serve hot.
