Coconut Thins These thin coconut biscuits are refreshing and delicious. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 23 May 2016 in Recipes Course New Update Main Ingredients Scraped coconut, Golden syrup Cuisine Fusion Course Snacks and Starters Prep Time 16-20 minutes Cook time 26-30 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Coconut Thins + 2 tablespoons Scraped coconut ¼ cup 2½ tablespoons Golden syrup ¼ cup Butter ? cup brown sugar/jaggery 6½ tablespoons Refined flour (maida) ½ teaspoon Lemon juice Method Heat the butter, brown sugar and golden syrup in a non-stick pan till the butter has melted and the sugar has dissolved. Remove from heat and cool. Preheat the oven to 180° C. Place a silicon sheet on the baking tray. Sieve flour, add the lemon juice and one-fourth cup coconut into the pan and mix well. Drop one-one tablespoon of the coconut mixture on the silicon sheet to make neat circles and sprinkle remaining coconut on top of each. Place the tray in the preheated oven and bake for ten to fifteen minutes. Remove from heat and cool.
