By Sanjeev Kapoor 12 Mar 2020 in Recipes Course New Update Main Ingredients Cupcakes, Coffee decoction Cuisine Fusion Course Desserts Prep Time 41-50 minutes Cook time 16-20 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Non Veg Ingredients list for Coffee Cupcakes with Coffee Cream Cheese Frosting Cupcakes 1/4 cup Coffee decoction 1 1/2 cups Refined flour 1/2 cup Butter 2/3 cup Granulated sugar 2 Eggs 2 teaspoons Vanilla essence 1/4 teaspoon Salt 1 1/2 teaspoons Baking powder 2 tablespoons Milk Frosting 1/2 cup Butter 2 cups Icing sugar 1/2 teaspoon Vanilla essence 1 tablespoon Coffee decoction 1 cup Cream cheese Method Preheat oven to 180° C. Take butter in a bowl, add sugar and beat with a hand blender till light and fluffy. Add eggs, one at a time, and beat well. Add vanilla essence and beat again. Add flour, salt, baking powder and coffee decoction and fold in till well combined into a lump free batter. Add milk and mix well. Transfer the batter in a piping bag. Pipe out the batter into cupcake moulds filling them till ¾ full. Keep the moulds into the preheated oven and bake for 15-20 minutes. Bring the mould out of the oven and set aside to cool slightly before demoulding. Set aside to cool completely. For the frosting, take butter in a bowl, add icing sugar, vanilla essence and coffee decoction and beat with an hand blender till light and fluffy. Add cream cheese and beat till well combined. Fill the frosting in a piping bag fitted with a star nozzle. Refrigerate for 15-20 minutes.
