By Sanjeev Kapoor 14 Nov 2016 in Recipes Course New Update Main Ingredients Couscous, Goat cheese Cuisine Moroccan Course Salads Prep Time 0-5 minutes Cook time 11-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Couscous Salad with Goat Cheese 1 cup Couscous 1/4 cup Goat cheese crumbled 2 teaspoons Butter 12-15 Shimeji mushrooms halved Grated zest of 1 orange 1/2 cup Orange juice 1/4 cup Walnuts toasted 1 small Carrot peeled and sliced 2-3 Red radishes cut into roundels 10-15 Kale leaves Dressing 2 tablespoons Olive oil 1/2 tablespoon Lemon juice 1/2 teaspoon Mustard paste to taste Salt to taste Crushed black peppercorns Method Heat butter in a non-stick pan. Add mushrooms and sauté well for two minutes. Drain and set aside in a bowl. To make the dressing, put olive oil, lemon juice, mustard paste, salt and crushed peppercorns in a bowl and mix well. Heat half cup of water in another non-stick pan, add orange zest and orange juice, mix continue to heat. Put couscous in another bowl and pour the flavoured water into it. Mix well, cover and set aside for five minutes. Fluff up the couscous grains with a fork. Add walnuts, carrots, sautéed mushrooms, cheese, radish and kale leaves and toss. Add the dressing, toss till well mixed and serve immediately.
