Ingredients list for Crab Rice

  • 3/4 cup Crab meat
  • 3 cups Rice cooked
  • 1 tablespoon Oil
  • 2 Eggs
  • 2 Spring onions chopped
  • 2-3 Fresh red chillies chopped
  • to taste Salt
  • 3-4 tablespoons Coconut milk
  • 1 1/2 tablespoons Lemon juice
  • 1 tablespoon Fresh coriander leaves chopped
  • for garnishing Spring onion greens chopped

Method

  1. Heat oil in non stick wok. Break eggs and separate the whites into another bowl.
  2. Add spring onions in wok and sauté for 2 minutes. Add egg whites and mix. Add crab meat and toss to mix. Add red chillies, rice and salt, mix well and cook for 2 minutes.
  3. Add coconut milk and lemon juice, mix well and cook for 2 minutes. Add coriander leaves and mix again. Cook for 2 minutes more. Serve hot garnished with chopped spring onion greens.
