Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Cook time : 11-15 minutes

Ingredients for Cream Corn and Egg on Toast Recipe

  • Corn Kernels ½ cup

  • Eggs 2

  • Brown bread slices 4

  • Oil 1 tablespoon

  • Ginger finely chopped 1 tablespoon

  • Green chillies finely chopped 1-2

  • Onion finely chopped 1 large

  • Turmeric powder ¼ teaspoon

  • Salt to taste

  • Fresh coriander leaves finely chopped 1 tablespoon

  • For garnishing

  • Fresh mint sprigs

  • A spring onion flower

Method

Step 1

Toast brown bread slices in a toaster till crisp.

Step 2

Heat oil in a non-stick pan, add ginger and green chillies and sauté for a minute.

Step 3

Add onion and sauté for 2 minutes. Add turmeric powder, cream corn and salt and mix well.

Step 4

Break eggs into the pan and mix. Add coriander leaves and mix and cook till the eggs are done.

Step 5

Place the toasts on a serving plate. Spread the corn mixture on them. Garnish with a mint sprig and a spring onion flower and serve hot.
