Ingredients 

  • 12-16 broccoli florets, blanched
  • ½ cup spring onion greens, blanched
  • 1½ teaspoons nutmeg (jaiphal) powder + for sprinkling
  • 1 tablespoon butter
  • 1 tablespoon refined flour (maida)
  • 1½ cups milk
  • Salt to taste
  • Fresh cream for drizzling 

Method 

  1. Blend together spring onion greens, broccoli florets and 1 teaspoon nutmeg power to a fine puree.
  2. Heat butter in a non-stick pan. Add flour, mix and sauté well. Add ½ cup milk and mix till the sauce thickens. 
  3. Add prepared puree and mix well. Add remaining milk, salt and ½ teaspoon nutmeg powder, mix well and bring to a boil.
  4. Drizzle some cream and sprinkle some nutmeg powder and serve hot.
