By Sanjeev Kapoor 31 Aug 2018 in Recipes Veg New Update Cream of Broccoli Soup Main Ingredients Broccoli florets, Spring onion greens Cuisine Fusion Course Soup Prep Time 10-15 minutes Cook time 10-15 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients 12-16 broccoli florets, blanched ½ cup spring onion greens, blanched 1½ teaspoons nutmeg (jaiphal) powder + for sprinkling 1 tablespoon butter 1 tablespoon refined flour (maida) 1½ cups milk Salt to taste Fresh cream for drizzling Method Blend together spring onion greens, broccoli florets and 1 teaspoon nutmeg power to a fine puree. Heat butter in a non-stick pan. Add flour, mix and sauté well. Add ½ cup milk and mix till the sauce thickens. Add prepared puree and mix well. Add remaining milk, salt and ½ teaspoon nutmeg powder, mix well and bring to a boil.
