Creamy Red Rice Risotto Red rice risotto enriched with plenty of cream, mascarpone cheese and parmesan cheese. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 09 Mar 2017 in Recipes Course New Update Main Ingredients Red rice, Butter Cuisine Italian Course Rice Prep Time 0-5 minutes Cook time 26-30 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Creamy Red Rice Risotto 1½ cups Red rice 4 tablespoons Butter 1 medium Onion sliced 2-3 Garlic cloves finely chopped 1 tablespoon Mixed herbs fresh, chopped 6 cups Vegetable stock to taste Salt 10-12 Black peppercorns crushed ½ cup Frozen green peas ½ cup Cream 1 tablespoon Mascarpone cheese for garnishing Parmesan cheese shavings for garnishing Fresh parsley sprigs Method Heat butter in a non-stick pan. Add onion, garlic and mixed herbs, mix well and sauté till onion turns golden brown. Add rice and sauté for 2-3 minutes. Add 1 cup vegetable stock, salt and crushed peppercorns and simmer till the stock is absorbed. Repeat the same with the remaining stock, adding 1 cup at a time. Add peas, mix and cook for 1 minute. Add mascarpone cheese and mix gently.
