By Sanjeev Kapoor 22 Jul 2014 in Recipes Course New Update Main Ingredients Refined flour, Peanut butter Cuisine Fusion Course Snacks and Starters Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Veg Ingredients list for Crunchy Peanut Cookies 1/2 cup Refined flour 2 tablespoons Peanut butter crushed 3/4 cup + Refined flour (maida) 1/2 teaspoon Cinnamon powder 1/4 teaspoon Soda bicarbonate 1/2 cup Rolled (porridge) oats 3/4 cup + Castor sugar (caster sugar) 1 tablespoon Golden syrup 1/4 cup + Desiccated coconut 1 teaspoon Lemon rind grated Method Place the refined flour in a bowl. Add cinnamon powder, soda bicarbonate and mix. Add peanut butter, crushed roasted peanuts and oats and mix. Add caster sugar, golden syrup and desiccated coconut and mix. Add grated lemon rind and a little water and mix into a soft dough. Wrap the dough in cling film and refrigerate for half an hour. Preheat the oven to 180°C/350°F. Take the dough out of the refrigerator and divide into small marble sized portions and shape into balls. Flatten each ball and place them a silicon baking sheet. Keep this sheet on a baking tray and bake in the preheated oven for fifteen minutes or until light golden brown. Remove from the oven and transfer the cookies to a wire rack to cool.
