Ingredients list for Cup Cakes

  • 2 cups Refined flour
  • 5 Orange marmalade
  • 2 cups Butter
  • 2 cups Sugar Free
  • 1 teaspoon Baking powder
  • 2 teaspoons Orange rind finely chopped
  • 1/2 cup Milk
  • 1/4 cup Orange marmalade

Method

  1. Preheat oven to 180°C.
  2. Break eggs into a bowl and whisk with a hand blender.
  3. Place butter in another bowl and cream till soft and fluffy. Add diet sugar and mix. Add eggs and mix.
  4. Sieve flour and baking powder into the bowl and mix well. Add orange rind and milk and mix well.
  5. Put the batter into a piping bag fitted with a star nozzle and pipe into silicon moulds till half full.
  6. Put some orange marmalade over the batter and pipe some more batter over the marmalade.
  7. Bake in the preheated oven for 25 minutes. Take them out of the oven and set aside to cool down to room temperature.
  8. You can serve them just like this or covered with butter icing.
