Curried Chicken Satay

Boneless chicken strips marinated with curry powder based marinade, skewered onto satay sticks and grilled. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Curried Chicken Satay

  • 400 grams Boneless chicken cut into strips
  • 1 tablespoon Curry powder
  • 2 tablespoons Peanut butter
  • 2 tablespoons Coconut cream
  • 1-2 Green chillies finely chopped
  • 1 teaspoon Dark soy sauce
  • 1 tablespoon Lemon juice
  • to taste Crushed black peppercorns
  • to taste Salt
  • 1 tablespoon Fresh coriander leaves chopped
  • for greasing Butter
  • 3-4 Iceberg lettuce leaves

Method

  1. Take chicken strips in a bowl. Add peanut butter, coconut cream, green chillies, curry powder, soy sauce, lemon juice, crushed peppercorns, salt and coriander leaves and mix well. Set aside to marinate for 10-15 minutes.
  2. Preheat an electric grill toaster.
  3. Skewer each marinated chicken strip on a satay sticks.
  4. Grease the preheated toaster with some butter, place the prepared satay sticks on the preheated toaster and grill from both sides till chicken is cooked and golden.
  5. Place few iceberg lettuce leaves on one side of the platter, place satay sticks on other side and serve hot.
