Ingredients list for Drumsticks and Lauki Soup - SK Khazana

  • 2 Medium drumsticks peeled and cut into 2 inch pieces
  • 1 Medium bottle gourd peeled and cut into 3/4 inch pieces
  • 1 teaspoon Oil
  • 1 inches Ginger chopped
  • to taste Salt
  • to taste Black pepper powder
  • to garnish Fresh coriander leaves chopped
  • to sprinkle Black peppercorns crushed

Method

  1. Heat oil in a pressure cooker, add ginger and sauté for 1 minute. Add drumsticks, and sauté well.
  2. Add bottle gourd, salt and 3 cups hot water and mix well. Close the cooker with the lid and cook under pressure till 1-2 whistles are given out.
  3. Open the lid once the pressure reduces completely. Transfer the cooked drumsticks onto a plate. Remove the pulp of the drumsticks and discard the peel. Transfer most of the pulp back into the pressure cooker keeping aside some for garnish.
  4. Blend the mixture in the pressure cooker with a hand blender to a fine paste.
  5. Transfer the blended mixture into a deep non-stick pan, add black pepper powder and salt and mix well.
  6. Transfer the soup into a serving bowl, garnish with the reserve cooked drumstick pulp, coriander leaves and crushed black peppercorns. Serve piping hot.
