You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Egg Chaat Recipe

  • Hard boiled eggs peeled 6

  • Coriander and mint chutney 2 tablespoons

  • Cucumber peeled 1/2 medium

  • Green chillies 2-3

  • Fresh mint leaves 15-20

  • Fresh coriander leaves 2 tablespoons

  • Salt to taste

  • Chaat masala to taste

  • Roasted cumin seeds crushed 3/4 teaspoon

  • Onion chopped 1/2 medium

  • Red capsicum 1/4 medium

  • Lettuce leaves a few

Method

Step 1

Finely chop onion. Halve cucumber vertically and slice.

Step 2

Finely chop green chillies, mint leaves and coriander leaves.

Step 3

Put all these in a big bowl. Halve eggs vertically and remove the yolks.

Step 4

These yolks can be mixed with tomato ketchup and used as a sandwich spread. For this recipe we need only the whites.

Step 5

Cut each half into 4 slices lengthways. Add salt, chaat masala, crushed roasted cumin seeds, mint and coriander chutney to the onions and mix.

Step 6

Cut red capsicum into thin strips and halve them. Add eggs to the onion mixture.

Step 7

Reserve some of the red capsicum for garnishing and add the rest.

Step 8

Mix everything gently. Make a bed of lettuce on a serving platter, put the egg chaat over them.

Step 9

Garnish with the reserved red capsicum and serve immediately.
