Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Fafda - SK Khazana Recipe

  • gram flour 2 cups

  • turmeric powder 1/2 teaspoon

  • Salt to taste

  • red chilli powder 3/4 teaspoon

  • papad khar 1 teaspoon

  • carom seeds 1 teaspoon

  • oil 3 tablespo

  • Fried green chillies to serve

  • Raw papaya salad to serve

  • Tea to serve

Method

Step 1

Take gram flour in a parat, add turmeric powder, salt, red chilli powder and papad khar. Crush carom seeds between your palms and add. Add 3 tbsps oil and mix well.

Step 2

Add sufficient water and knead into soft dough. Cover with a damp muslin cloth and set aside for 30 minutes.

Step 3

Slightly knead the dough, take a portion of the dough and shape it into a cylinder, cut into equal portions and shape them into oblong.

Step 4

Grease the worktop with some oil, press and stretch with the heel of your hand into long strips. Scrape the bottom using a knife and pick it up from the worktop.

Step 5

Heat sufficient oil in a kadai, slide in the fafdas into hot oil and deep-fry till crisp. Drain on absorbent paper.

Step 6

Serve with fried green chillies, raw papaya salad and tea.
