You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Fluffy Omellete - SK Khazana Recipe

  • Eggs 12

  • Butter 4 tablespoons

  • Salt to taste

  • Black peppercorns crushed to taste

  • Chives to garnish

  • Red cherry tomatoes to serve


Step 1

For each omellete break 3 eggs, separate the yolks and whites and put them in 2 different bowls.

Step 2

Whisk the yolks well. Beat the whites with an electric beater till light peaks are formed. Add the yolks to the whites and mix well.

Step 3

Heat a non-stick pan, add the eggs and let them cook. When the underside is cooked slightly, lift it and slide in 1 tbsp butter. Cover and cook on medium heat for 2-3 minutes.

Step 4

Sprinkle salt and crushed black peppercorns over the omellete and cook for a minute.

Step 5

Fold it into half, place it in a serving plate and chop some chives over it. Serve hot along with red cherry tomatoes.
