Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Fresh Tuvar Green Masala Recipe

  • Fresh tuvar pods , shelled 200 grams

  • Fresh coriander-coconut-ginger-green chilli paste 1/2 cup

  • Oil 2 tablespoons

  • Onion , chopped 1 medium

  • Potato 1 medium

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Fresh coriander sprig to garnish


Step 1

Heat oil in an earthen pot, add onion and sauté till golden brown.

Step 2

Meanwhile slice potato and soak in a bowl of water.

Step 3

Add turmeric powder to the onion mixture and mix well. Add fresh coriander-coconut-ginger-green chilli paste, mix and sauté well.

Step 4

Drain and add potato and fresh tuvar and mix well. Add salt and mix well.

Step 5

Add 1 cup water, mix well, cover and cook till both potato and tuvar are cooked completely.

Step 6

Transfer into a serving bowl, garnish with coriander sprig and serve hot.
