If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ranging in colours from orange, black, pink to red, yellow and white, this delicious vegetable is within the reach of rich and poor alike and is rightly called the universal root. The best role that this winter vegetable can play – chomp on one as it is an excellent snack!

Ingredients for Gajar Halwa Burfi Recipe

  • Carrots thickly grated 5 large

  • Ghee 4 tablespoons

  • Sugar 1 cup

  • Green cardamom powder 1 teaspoon

  • Condensed milk (200 ml) 1/2 tin

  • Khoya/mawa grated 1 cup

  • Almonds blanched, peeled and slivered 10-12

  • Pistachios blanched, peeled and slivered 10-12

  • Silver varq 2 sheets

Method

Step 1

Heat ghee in a non stick pan. Add the carrots and sauté till the moisture gets absorbed.

Step 2

Add the sugar and mix. Cook, stirring frequently, till the carrots get cooked and the moisture is absorbed. Add green cardamom powder and mix.

Step 3

Grease a tray.

Step 4

Add condensed milk and mix well. Add khoya and mix well. Cook till the khoya melts and mixes well with the carrots and thickens.

Step 5

Pour the mixture into the greased tray and spread evenly. Sprinkle almonds and pistachios.

Step 6

Set it aside to cool. You can even keep it in the refrigerator to set.

Step 7

Decorate with silver varq. Cut into squares or diamonds and serve.
