German Beer Cheese Soup The creamy cheddar cheese and beer broth is flavoured with sautéed garlic, onions and carrots. A dash of Dijon mustard adds plenty of spunk to it. By Sanjeev Kapoor 06 Dec 2017 in Recipes Course New Update Main Ingredients Beer, Cheddar cheese Cuisine German Cuisine Course Soups Prep Time Preparation Time Cook time Cooking Time Serve Taste Spicy Level of Cooking Easy Others Veg Ingredients list for German Beer Cheese Soup 2 cups Beer 1/4 cup Cheddar cheese 4 tablespoon Unsalted butter 1 medium Carrot finely chopped 1 large Onion diced 2 Garlic cloves minced 1/4 cup Refined flour (maida) 1 1/2 cups Milk 1/2 cup Fresh cream 1 tablespoon Dijon mustard to taste Crushed black peppercorns to taste Salt Method Melt butter in a non-stick pan, addcarrot, onion and garlic, mix and sauté for ten minutes. Add flour and sauté, stirring frequently, till the flour turns golden. Combine milk and cream in a bowl and mix well. Add this to the flour mixture slowly and whisk till well combined. Add beer and mustard and bring to a boil, whisking frequently. Reduce heat and simmer for ten minutes or till the mixture thickens. Remove from heat, add cheese and crushed peppercorns. Mix well and adjust salt. Serve hot.
