Ingredients list for Gozleme Bread
- 1 cup + for dusting Refined flour (maida)
- 1 tablespoon Fresh yeast
- a pinch + 1 teaspoon Castor sugar (caster sugar)
- a pinch Salt
- 1 tablespoon Olive oil
- ½ cup Processed cheese grated
- ½ cup Mozzarella cheese grated
- 1 teaspoon Red chilli flakes
- 1 teaspoon Mixed herbs dried
- to taste Crushed black peppercorns
- for greasing Melted butter
Method
- Take yeast in a bowl. Add 2 tablespoons warm water and a pinch castor sugar and mix well. Set aside to activate.
- Combine flour, 1 teaspoon castor sugar, salt and activated yeast in another bowl and mix well. Add sufficient water and knead into dough.
- Transfer the dough on the worktop, put olive oil on top and knead into soft dough.
- Dust a bowl with some flour, transfer the dough, cover with damp muslin cloth and set aside to prove for 10-15 minutes.
- Transfer the proven dough on the worktop, dust some flour on top and roll out to a thick sheet.
- Cut the sheet into roundels with a medium sized cookie cutter and discard the excess dough.
- Put processed cheese, mozzarella cheese, chilli flakes and mixed dried herbs in another bowl and mix. Add crushed peppercorns and mix well.
- Brush some water on each disc, put some cheese mixture in the center, fold into half and press the edges. Seal the edges using the back of a fork.
- Heat a non-stick pan and grease with some butter. Place the prepared breads and cook, turning sides, till golden on both sides.
- Serve hot.
