Ingredients list for Green Pea Mint Soup

  • 2 cups Shelled green peas
  • 1/2 cup Fresh mint leaves
  • 2 teaspoons Butter
  • 1 tablespoon Garlic chopped
  • 1 Small onion chopped
  • 2-3 sprigs Fresh thyme
  • to taste Salt
  • 4 cups + as required Vegetable stock
  • to taste Black pepper powder
  • to garnish Fresh cream

Method

  1. Heat butter in a non-stick wok till it melts. Add garlic and sauté till golden brown.
  2. Add onion, mix and sauté till translucent. Add 2-3 fresh thyme sprigs, green peas and salt and mix well.
  3. Add 4 cups vegetable stock, mix well and let the mixture come to a boil. Reduce heat and cook till the peas are soft and cooked. Discard the thyme sprigs.
  4. Add mint leaves and take the pan off the heat. Let the mixture cool down, transfer into a blender jar and blend to a fine puree.
  5. Transfer the puree into the same pan and place it back on heat. Add stock as required to adjust the consistency.
  6. Add black pepper powder, mix well and let the soup come to a boil.
  7. Transfer into a serving bowl, garnish with a swirl of fresh cream and serve hot.
