Green Tomato Sabzi

A traditional dish from Haryana – green tomatoes tempered and cooked with some simple Indian spices. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 5 medium green tomatoes, roughly chopped
  • 3 tablespoons oil
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • Salt to taste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin seeds
  • 2 dried red chillies

Method

  1. Heat oil in a deep non-stick pan.
  2. Take ginger paste, garlic paste, salt, turmeric powder, red chilli powder and coriander powder in a bowl. Add ¼ cup water and mix well.
  3. Add cumin seeds to the oil and sauté till light brown. Add dried red chillies and sauté for few seconds. Add the spice mixture and cook on medium heat for 2-3 minutes.
  4. Add green tomatoes and mix well. Add sufficient water and mix well. Cover and cook for 7-8 minutes or till tomatoes turn pulpy.
  5. Transfer the subzi into a serving bowl and serve hot.
