Green Tomato Salsa This salsa is different as it is made with green tomatoes instead of red. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 03 Jun 2021 in Recipes Course New Update Main Ingredients Green tomatoes, Olive oil Cuisine Mexican Course Dips Prep Time 21-25 minutes Cook time 16-20 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Veg Ingredients list for Green Tomato Salsa 4 medium Green tomatoes as required Olive oil to taste Salt 1 small Onion ,finely chopped 1 teaspoon Green chillies ,finely chopped 1 tablespoon Fresh coriander leaves ,finely chopped a pinch Castor sugar (caster sugar) 1/2 Lemon to serve Corn chips Method Preheat oven to 200° C. Cut tomatoes into roundels.Grease a baking tray with some olive oil, place the tomato roundels on it, brush some olive oil over them and sprinkle some salt on top. Place the tray in the preheated oven and roast for 15-20 minutes. Remove the tray from the oven and let the tomatoes cool. Put the roasted tomato roundels on the worktop, chop them and transfer into a bowl. Add onion, green chillies, coriander leaves, salt and castor sugar. Squeeze the juice of ½ lemon juice into the bowl and add 1 teaspoon olive oil and mix well.
