Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Green Tomato Salsa Recipe

  • Green tomatoes 4 medium

  • Olive oil as required

  • Salt to taste

  • Onion ,finely chopped 1 small

  • Green chillies ,finely chopped 1 teaspoon

  • Fresh coriander leaves ,finely chopped 1 tablespoon

  • Castor sugar (caster sugar) a pinch

  • Lemon 1/2

  • Corn chips to serve


Step 1

Preheat oven to 200° C.

Step 2

Cut tomatoes into roundels.Grease a baking tray with some olive oil, place the tomato roundels on it, brush some olive oil over them and sprinkle some salt on top.

Step 3

Place the tray in the preheated oven and roast for 15-20 minutes. Remove the tray from the oven and let the tomatoes cool.

Step 4

Put the roasted tomato roundels on the worktop, chop them and transfer into a bowl. Add onion, green chillies, coriander leaves, salt and castor sugar. Squeeze the juice of ½ lemon juice into the bowl and add 1 teaspoon olive oil and mix well.

Step 5

Transfer into a serving bowl and serve with corn chips.
