Ingredients list for Green Tomato Salsa

  • 4 medium Green tomatoes
  • as required Olive oil
  • to taste Salt
  • 1 small Onion ,finely chopped
  • 1 teaspoon Green chillies ,finely chopped
  • 1 tablespoon Fresh coriander leaves ,finely chopped
  • a pinch Castor sugar (caster sugar)
  • 1/2 Lemon
  • to serve Corn chips

Method

  1. Preheat oven to 200° C.
  2. Cut tomatoes into roundels.Grease a baking tray with some olive oil, place the tomato roundels on it, brush some olive oil over them and sprinkle some salt on top.
  3. Place the tray in the preheated oven and roast for 15-20 minutes. Remove the tray from the oven and let the tomatoes cool.
  4. Put the roasted tomato roundels on the worktop, chop them and transfer into a bowl. Add onion, green chillies, coriander leaves, salt and castor sugar. Squeeze the juice of ½ lemon juice into the bowl and add 1 teaspoon olive oil and mix well.
  5. Transfer into a serving bowl and serve with corn chips.
