Ingredients list for Healthy Fruit and Nut Toasted Sandwich - SK Khazan

  • 4 medium Red apples peeled and cored
  • 10-12 Cashew nuts roasted
  • 1/4 cup Roasted almonds
  • 1/4 cup Walnuts roasted
  • 8 Whole wheat bread slices
  • 2 teaspoons Butter +as required
  • 1 cup Orange juice
  • 1 cup Paneer (cottage cheese) greated
  • to serve Maple syrup

Method

  1. Thickly slice apples and set aside
  2. Heat butter in a non-stick pan, place the apple slices and cook for 1-2 minutes on both sides. Add orange juice and cook for 2-3 minutes or till the moisture dries up.
  3. Put cashew nuts, almonds and walnuts in a mortar and pestle and pound to a coarse powder.
  4. Take cottage cheese in a bowl, add nuts mixture and mix well. Set aside.
  5. Apply butter on one side of each bread slice and spread the apple mixture evenly on four slices of bread. Spread a portion of the nut-cottage cheese mixture over the apple. Cover with remaining slices of bread.
  6. Heat a little butter on a grill pan and place the sandwiches and grill for 1-2 minutes, flip and apply a little butter. Grill further for 1-2 minutes.
  7. Transfer the sandwiches on a serving plate and serve warm with maple syrup.
