Ingredients list for Indonesian Coconut Rice
- 1 1/2 cups Jasmine rice washed and drained
- 2 cups Coconut milk
- 1 inch Cinnamon
- 1 inch Lemongrass stalk bruised
- 1 Bay leaf
- to taste Salt
- for garnishing Deep-fried onions
Method
- Heat coconut milk in a deep non-stick pan. Add rice and one cup of water and stir well.
- Add cinnamon, lemongrass, bay leaf and salt and mix well.Cover and cook on medium heat till the rice is fully done.
- Serve hot garnished with fried onions.
