Ingredients list for Kapnya

  • 1 cup Whole wheat flour (gehun ka atta)
  • 1/4 cup Jaggery , chopped
  • 1/4 cup Gram flour (besan)
  • a pinch Salt
  • 1/2 tablespoon Fennel sees (saunf)
  • 1/2 tbsp + to deep fry Hot oil
  • to sprinkle Poppy seeds

Method

  1. Heat ¼ cup water in a deep non-stick pan, add jaggery and cook till it melts.
  2. Take whole wheat flour in a bowl, add gram flour, salt, fennel seeds and hot oil and mix well.
  3. Add the jaggery mixture and knead into stiff dough.
  4. Heat sufficient oil in a kadai.
  5. Roll out the dough into a thin disk and sprinkle poppy seeds on top. Press lightly.
  6. Cut into diamonds, slide them into hot oil and deep fry, on medium heat, till crisp. Drain on absorbent paper.
  7. Allow to cool and serve or store in airtight containers.
