By Sanjeev Kapoor 27 Nov 2015 in Recipes Course New Update Main Ingredients Rice , Saffron Cuisine Maharashtrian Course Rice Prep Time 41-50 minutes Cook time 31-40 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Kesari Bhaat 1 cup Rice a few strands Saffron 25 grams Sugar crystals (khadi sakhar) 1/2 teaspoon Green cardamom powder 1 tablespoon Cashewnuts 1 tablespoon Raisins 1 tablespoon Pure ghee 1/2 cup Sugar Method Soak rice for half an hour. Heat ghee in a pan, fry raisins and cashewnuts, drain and keep aside. In the same ghee add rice and sauté till rice starts separating. Dissolve saffron in warm water and keep aside. Add 1½ cups of boiling water to the rice and add saffron water and let it cook. When half done add sugar and continue to cook till all the water has been absorbed and the rice is cooked. Finally add the cardamom powder and garnish it with fried dry fruits and sugar crystals. Serve hot.
