The Bengalis are great food lovers and take pride in their cuisine.  In fact so obsessed are they about food, that the man of the house goes to the market daily to buy a fresh supply vegetables and fish which is a must in their daily menu.  The medium of cooking is mustard oil which adds its own pungency.  Another very important item of Bengali cuisine is the variety of sweets or mishti as they call them.  Most of them are milk based and are prepared from chhena.
A meal, for the Bengali, is a ritual in itself.  Bengalis spend not only the great deal of time thinking about the food but also on its preparation and eating. 

Prep Time : 2.30-3 hour

Cook time : 11-15 minutes

Serve : 4

Ingredients for Kesari Sandesh Recipe

  • Cottage Cheese a large pinch

  • Milkmaid 500 grams

  • Milkmaid 1 cup (400gms)

  • Refined flour 10 grams

  • Milk powder 300 grams

  • Powdered sugar 20 grams

Method

Step 1

Cut cottage cheese into small chunks and place in a food processor. Add 1 cup Milkmaid, refined flour, milk powder and powdered sugar and blend well.

Step 2

Heat a non-stick pan. Transfer cottage cheese mixture in it, mix well and cook till thick, stirring continuously.

Step 3

Transfer the mixture into an aluminium tray and spread evenly. Smoothen the surface with a spatula.

Step 4

Heat 3 tbsps water till warm. Add saffron and let the flavours infuse. Add 4 tbsps Milkmaid and heat further.

Step 5

Add saffron mixture in the aluminium tray and spread evenly. Cool to room temperature and refrigerate for 2-3 hours.

Step 6

Cut into squares and serve.
