By Sanjeev Kapoor 18 Mar 2021 in Recipes Course New Update Main Ingredients Lemon juice, Castor sugar Cuisine Fusion Course Desserts Prep Time 4-5 hour Cook time 11-15 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Non Veg Ingredients list for Lemon Curd Ice Cream 1/2 cup Lemon juice 3/4 cup Castor sugar 1 Lemon 5 Egg yolks 1 1/4 cups Butter 3 cups Vanilla ice cream to garnish Fresh mint sprigs Method Heat a non-stick pan, add sugar and lemon juice and mix well. Grate the zest of 1 lemon into the pan and mix well. Pour this mixture into a bowl of egg yolks and whisk well. Pour the mixture back into the pan, cook on low heat. Add butter and whisk again and cook till the mixture thickens. Transfer into a bowl and let it cool. Take vanilla ice cream in a large bowl add ¾ of the lemon curd and mix gently. Transfer the mixture in an air tight container and top with the some lemon curd and freeze till set.
