Lemon Mint Tart

Ground biscuits topped with a mixture of condensed milk, egg yolks and mint essence and baked. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Lemon Mint Tart

  • for garnishing Lemon zest grated, of 2 lemons +
  • Juice of 1 lemon
  • 10-12 Biscuits
  • 10-12 Chocolate cookies
  • ¼ cup Melted butter
  • 1 cup Condensed milk
  • 2 Egg yolks
  • 2 teaspoons Mint essence
  • For topping Whipped cream

Method

  1. Preheat oven at 180ºC.
  2. Grind biscuits and chocolate biscuits into coarse powder and transfer into a bowl. Add butter and mix well.
  3. Line tart moulds with the mixture. Press lightly
  4. Put condensed milk, egg yolks, mint essence, lemon zest and lemon juice in another bowl. Whisk till well blended.
  5. Pour the condensed milk into lined tart moulds. Place moulds on baking tray, put tray in preheated oven and bake for 20-25 minutes.
  6. Take the tarts out of the oven and let them cool down to room temperature. Demould. Pipe whipped cream on top, garnish with lemon zest and serve.
