Heat oil in a deep non stick pan. Add carrot, red and yellow capsicums and sauté. Add the cornmeal and sauté for 2-3 minutes. Add the vegetable stock, salt and crushed black peppercorns and mix well. When the vegetables are nearly done, add the French beans and broccoli and cook for a few minutes.
