Mashed Potato Rings

Mashed potatoes mixed with chives, cornflour and breadcrumbs, shaped into rings and deep-fried – simply yummy. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Mashed Potato Rings

  • 4 medium Potatoes peeled
  • 1 cup Bread crumbs fresh
  • 1 cup Bread crumbs dried
  • 3 tablespoons Cornflour/ corn starch
  • 2-3 Chives chopped
  • to taste Salt
  • to deep fry Oil
  • Butter

Method

  1. Cut potatoes into medium sized cubes and transfer into a deep pan.
  2. Add enough water to cover the potatoes. Add salt and mix.
  3. Cover and cook till all the water is absorbed and the potatoes are well cooked.
  4. Mash the potatoes with a masher and cook on low heat till all the water evaporates and the mixture thickens.
  5. Add fresh cream and butter and mix well.
  6. Transfer the mixture into a plate and allow to cool.
  7. Transfer into a large bowl, add chives, cornflour and fresh bread crumbs and mix well.
  8. Shape the mixture into rings and deep fry till golden brown and crisp.
  9. Drain on absorbent paper.
  10. Serve hot.
