Ingredients for Mawa Muffin with Shrikhand Frosting Recipe

  • Mawa / khoya , grated 150 grams

  • Refined flour (maida) 160 grams

  • Butter , softened 120 grams

  • Sweet condensed milk 200 grams

  • Baking powder 1/2 teaspoon

  • Baking soda 1/2 teaspoon

  • Milk 75 millilitres

  • Vanilla essence 1 teaspoon

  • Kesar shrikhand as required

  • Sutarfeni to garnish

  • Wafer biscuits to garnish

  • Chocolate chips to garnish

  • Small carrot triangles , blanched to garnish

Method

Step 1

Preheat the oven to 180° C.

Step 2

Take butter in a bowl and cream it lightly with an electric hand blender. Add khoya and continue to cream with the hand blender at a low speed. Add condensed milk and mix well.

Step 3

Sift together refined flour, baking powder and baking soda into another bowl. Gradually add this flour mixture to the butter mixture and mix in cut and fold method ensuring there are no lumps formed.

Step 4

Add milk and vanilla essence and continue to mix.

Step 5

Put this mixture into muffin moulds till they are ¾ full. Keep the moulds on a baking tray.

Step 6

Keep the tray in the preheated oven and bake for 20-25 minutes.

Step 7

Remove the tray from the oven and let them cool down to room temperature.

Step 8

Remove the muffins from the moulds and keep them on a serving plate. Put the shrikhand in a piping bag and pipe out over each muffins.

Step 9

Garnish each muffin with sutarfeni, a wafer biscuit, chocolate chips and carrot triangles and serve.
