Peel and cut mango roughly. Blend mango and peach pieces with half of the apple juice in a blender. Transfer the puree into a pan. Add powdered sugar and the remaining apple juice and simmer for five minutes. Strain the sauce and cook again to reduce till it attains a thick sauce type consistency. Deseed plums and slice. Core the pineapple slices. Cut the remaining peaches into slices. In a plate arrange the fruits thus: pineapple slice, plum slice, peach slice. Repeat this order twice. Pour the sauce over these fruits and top with brown sugar. Flambé. Place a cherry on top and serve immediately.
