Pour the mixture into abarfitray and refrigerate till set. Scrape the mixture at regular intervals to get a granita texture using a fork. Discard stem and bottom of a pear and finely chop. Put some chopped pear into individual martini glasses and put some scraped granita on top. Serve immediately garnished with a mint sprig.
