Ingredients list for Mix Sauce Pasta

  • Cheese sauce
  • 1/2 cup Processed cheese grated
  • 1 tablespoon Butter
  • 1 tablespoon Refined flour
  • 3/4 cup Milk
  • to taste Black peppercorns crushed
  • to taste Salt
  • Tomato sauce
  • 4 Medium tomatoes blanched, peeled and chopped
  • 1 tablespoon Olive oil
  • 5-6 cloves Garlic cinely chopped
  • 1/2 teaspoon Red chilli flakes
  • to taste Salt
  • 2 tablespoons Tomato ketchup
  • to taste Black peppercorns crushed
  • Pasta
  • 1 1/2 cups Penne pasta boiled
  • 1 tablespoon Olive oil
  • 3-4 cloves Garlic cloves choppped
  • 1 Large onion sliced
  • 5-6 Broccoli flores blanched
  • 3-4 Button mushrooms quartered
  • 1/2 Small red capsicum diced
  • 1/2 Small green zucchini cut into 1 inch cubes
  • 1/2 Small yellow squash cut into 1 inch cubes
  • to taste Salt
  • to taste Black peppercorns crushed
  • as required Parmesan cheese block
  • 1 teaspoon Red chilli flakes
  • to garnish Parmesan cheese shavings

Method

  1. Heat butter in a non-stick pan, add refined flour and whisk well. Add milk and whisk to avoid lumps. When the mixture thickens slightly, add cheese and mix till cheese dissolves. Add salt and crushed black pepper and mix well. Take the pan off the heat and set aside.
  2. Heat olive oil in another non-stick pan, add garlic and saute till raw smell disappears. Add chilli flakes and mix well. Add tomatoes and mix well. Add salt and mix well. Add ketchup, mix well and cook till the mixture is thick. Add crushed black peppercorns and mix well. Take the pan off the heat.
  3. Heat olive oil in yet another non-stick pan, add garlic and onion, mix and sauté till golden brown.
  4. Add broccoli, mushrooms, red capsicum, zucchini and yellow squash and mix well. Add salt and crushed black peppercorns, mix well and cook for 1-2 minutes.
  5. Add tomato sauce and white sauce, mix well and cook for 2-3 minutes.
  6. Add pasta and mix well and cook for 1-2 minutes. Grate parmesan cheese into the pan and sprinkle red chilli flakes and mix well.
  7. Transfer into a serving bowl, garnish with parmesan shavings and sprinkle crushed black peppercorns on top and serve hot.
