How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Cook time : 51-60 minutes

Ingredients for Moroccan Rice Pudding Recipe

  • Short grain rice ¾ cup

  • Milk 6 cups

  • Vanilla pod 1

  • Cinnamon 1 inch

  • Sugar ¾ cup

  • Fresh cream ½ cup

  • Honey 1 tablespoon

  • Zest of ½ orange

  • Pistachios slivers for garnishing

Method

Step 1

Heat milk in a non-stick pan.

Step 2

Slit the vanilla pod, scrape the seeds and add to milk along with the pod. Add cinnamon, stir and bring to a boil.

Step 3

Add rice, reduce heat and cook for 30-35 minutes or till the rice is fully done.

Step 4

Add sugar and cream and mix well. Discard the vanilla pod and cinnamon and cook till the mixture thickens.

Step 5

Add honey and orange zest and mix well.

Step 6

Serve warm garnished with pistachio slivers.
