Ingredients list for New York Cheesecake

  • 8-10 Digestive biscuits coarsely crushed
  • 1 tablespoon Castor sugar (caster sugar)
  • 85 grams Melted butter
  • Filling
  • 300 grams Cream cheese
  • 250 grams Castor sugar (caster sugar)
  • 3 tablespoons Refined flour (maida)
  • a pinch Salt
  • 1½ teaspoons Lemon juice
  • 1½ teaspoons Vanilla essence
  • Zest of 1 lemon
  • 3 Eggs
  • 1 Egg yolk
  • 1½ cups Sour cream

Method

  1. Preheat oven to 180º C.
  2. Take crushed biscuits in a bowl. Add castor sugar and butter, mix well.
  3. Line a loose bottom tin with this mixture, place the tin in the preheated oven and bake for 10 minutes to make the base.
  4. To make filling, beat cream cheese in a bowl with an electric beater till creamy. Add castor sugar, flour and salt and beat again.
  5. Add lemon juice, vanilla essence and lemon zest and beat.
  6. Add eggs and egg yolk and beat again. Add sour cream and mix till well combined.
  7. Pour this mixture over the baked base and tap lightly. Place the tin in the preheated oven and bake for 20-25 minutes.
  8. Cool down to room temperature, demould, cut into wedges and serve.
