By Sanjeev Kapoor 27 Feb 2017 in Recipes Course New Update Main Ingredients Cream cheese, Desiccated coconut Cuisine Fusion Course Desserts Prep Time 4-5 hour Cook time 0-5 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for No Bake Coconut Cheesecake 1 cup Cream cheese For topping Desiccated coconut 8-10 cashewnut biscuits crushed 2 tablespoons Melted butter ½ cup Castor sugar (caster sugar) ¼ cup Fresh cream 1 teaspoon Vanilla essence 1 cup White chocolate melted for garnishing Fresh mint sprigs Method Take the crushed biscuits in a bowl. Add butter and mix well. Spread the mixture in a loose bottom tin evenly, press and refrigerate to make the base Cream together cream cheese and castor sugar till smooth. Add cream, vanilla essence and chocolate and mix well. Pour the cheese mixture over the crust, top with coconut and tap. Refrigerate for 3-4 hours.
