Ingredients list for Open Egg Sandwich

  • 2 Hot dog buns whole wheat
  • 3-4 Egg whites hard-boiled, cut into wedges
  • 3-4 tablespoons Mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Madras curry powder
  • 1-2 Green chillies finely chopped
  • to taste Salt
  • ½ medium Onion finely chopped
  • to taste Crushed black peppercorns
  • for garnish Mixed micro greens

Method

  1. Take mayonnaise, mustard paste, curry powder, green chillies, salt, onion and crushed peppercorns in a bowl and mix well.
  2. Cut each hotdog bun horizontally into half.
  3. Spread some mayonnaise-mustard mixture on each half bun. Place some egg whites and sprinkle some salt on top.
  4. Garnish with micro greens. Serve immediately.
