Ingredients list for Orange and Olive Oil Cake

  • 3 Oranges
  • 1/4 cup Orange juice
  • 2/3 cup Extra virgin olive oil
  • Refined flour (maida) 2 cups + for dusting
  • for greasing Butter
  • 1/2 cup Buttermilk
  • 2 teaspoons Lemon juice
  • 1 cup Sugar
  • 3 Eggs
  • a pinch Salt
  • 1/4 teaspoon Baking soda
  • 1 1/2 teaspoon Baking powder

Method

  1. Heat buttermilk in a non-stick pan till just warm. Add lemon juice and set aside for ten minutes. Stir well.
  2. Preheat oven to 180°C. Grease an 8 inch round cake tin with some butter and dust with some flour.
  3. Grate the peel of the oranges into a bowl. Add sugar and mix well. Add the orange juice, buttermilk, eggs and olive oil and beat well.
  4. Add the flour, salt, baking soda and baking powder and beat till a smooth batter is formed.
  5. Pour the batter into the prepared tin, place the tin in the preheated oven and bake for forty-five to fifty minutes. Remove from oven and cool.
  6. Remove from the tin, cut into wedges and serve.
