Ingredients for Orange and Quinoa Salad Recipe

  • Oranges 2 medium

  • Quinoa , cooked 2 cups

  • Onion , peeled 1 medium

  • Cherry tomatoes 8-10

  • Walnuts , roasted and roughly chopped 8-10

  • Red radishes , thinly sliced 8-10

  • Microgreens 1/2 cup

  • Feta cheese to sprinkle

  • Dressing

  • Orange marmalade 3 tablespoons

  • Salt to taste

  • Black peppercorns , crushed to taste

  • Olive oil 6 tablespoons

  • Lemons 4

  • Honey 3 tablespoons


Step 1

Peel orange and separate the segments. Remove seeds and halve them.

Step 2

Thinly slice onion and gently separate the layers.

Step 3

To make the dressing, take marmalade in a small jar, add salt, crushed black peppercorns, olive oil and mix till well combined.

Step 4

Halve the lemons and squeeze their juice directly into the jar and mix well. Add honey, place the lid on and shake the mixture till everything is well combined.

Step 5

Halve the cherry tomatoes.

Step 6

Take quinoa in a large bowl, add walnuts, onion, cherry tomatoes, red radishes, micro greens and halved orange segments. Pour the dressing into it and toss lightly.

Step 7

Transfer the salad onto a serving plate, crumble and sprinkle feta cheese on top. Serve immediately.
