Paan Mousse

A mousse recipe that will become your favourite. Inspired from Indian Paan, this green dessert is perfect for any party. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Paan Mousse

  • 3-4 Readymade masala paan
  • 2 cups Whipped cream
  • 1/2 cup White chocolate ganache
  • 1 tablespoon Gelatin
  • for platin Chocolate soil
  • for platin Gulkand

Method

  1. Break the paans and put them into a mixer jar and grind into a coarse paste.
  2. Transfer the paste into a bowl, rinse the mixer jar with a little water and add to the paste and mix well.
  3. Take gelatin in a small bowl, add 2 tablespoon water, mix well and set aside to bloom.
  4. Take whipped cream in a large bowl, add white chocolate ganache and mix well. Add 3-4 tablespoons of pan mixture and mix well.
  5. Add the bloomed gelatin and mix well. Refrigerate for 2-3 hours or till the mixture is almost set.
  6. Transfer the mousse into a piping bag fitted with a star nozzle.
  7. Put a spoon full of chocolate soil in each serving shot glass, spread some gulkand on it and pipe the mousse over it.
  8. Garnish with a pan leaf and some gulkand serve chilled.
