Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Palak Paneer Sandwich - SK Khazana Recipe

  • Spinach leaves (palak) blanched and shredded 1

  • Paneer (cottage cheese) grated 200

  • Bread slices 8

  • Oil 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Garlic chopped 1 tablespoon

  • Green chilli chopped 1

  • Salt to taste

  • Processed cheese grated 4 tablespoons

  • Mozzarella cheese grated 3 tablespoons

  • Butter as required

  • Tomato ketchup to serve

  • French fries to serve

Method

Step 1

Heat oil in a non-stick pan, add cumin seeds and saute till their colour changes. Add garlic and green chilli, mix and sauté for 1 minute.

Step 2

Add spinach, mix and sauté for 1 minute. Add salt, mix and sauté for 1-2 minutes. Transfer into a bowl.

Step 3

Add cottage cheese, processed cheese and mozzarella cheese and mix well.

Step 4

Apply butter on one side of 4 slices of bread, spread a generous portion of stuffing on each evenly. Cover with remaining slices of bread and apply butter on top.

Step 5

Heat a griller, grease it with a little butter and place 2 sandwiches, at a time, on it with the butter side up, close and grill till evenly golden on both sides.

Step 6

Cut the sandwiches in half diagonally and place them serving platter. Serve hot with French fries and tomato ketchup.
