By Sanjeev Kapoor 17 Feb 2016 in Recipes Course New Update Palak Raita Main Ingredients Spinach , Skimmed milk yogurt Cuisine Indian Course Raitas Prep Time 11-15 minutes Cook time 6-10 minutes Serve 4 Taste Tangy Level of Cooking Easy Others Veg Ingredients 2 bunches spinach chopped 2 cups skimmed milk yogurt 2 teaspoons cumin seeds Black salt (kala namak) to taste 1 tablespoon red chilli powder 1/2 teaspoon oil 3/4 cloves garlic finely chopped 2 green chillies finely chopped 2 medium spring onions with greens chopped Salt to taste Method Dry roast cumin seeds on a hot tawa and grind to a fine powder. Whisk the skimmed milk yogurt and add black salt, roasted cumin powder and red chilli powder. Mix well and chill in the refrigerator. Heat oil in a non-stick pan, add garlic and green chillies and stir-fry briefly. Add spinach and spring onion along with its greens and sauté over high heat for three to four minutes, stirring continuously. Season with salt and mix well. Continue to cook on high heat till the spinach is almost dry. Take it off the heat and cool. Mix with the seasoned yogurt just before serving.
