Paneer Lollipops

Cottage cheese mixture shaped into lollipops dipped into batter and deep fried. A treat for the vegetarians This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 cup cottage cheese (paneer), grated
  • ¼ cup cabbage shredded + to serve 
  • ⅓ cup carrots, finely chopped
  • 2 medium potatoes boiled, peeled and mashed
  • 1 tablespoon lemon juice
  • Salt to taste 
  • Crushed black peppercorns to taste
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon red chilli paste
  • 1 tablespoon cornflour
  • 10-12 breadsticks
  • Oil to deep fry 

Batter

  • ½ cup refined flour
  • Salt to taste 
  • Crushed black peppercorns to taste
  • ½ cup cornflour
  • 1 tablespoon red chilli paste

Method

  1. Take cottage cheese in a bowl, add cabbage and carrots and mix well. Add potatoes and mix well.
  2. Add lemon juice, salt, crushed black peppercorns, ginger-garlic paste and red chilli paste and mix well.
  3. Add cornflour and mix. Divide the mixture into equal portions. Wrap each portion around a breadsticks and shape into a lollipop.
  4. Heat sufficient oil in a kadai.
  5. Mix together refined flour, salt, crushed black peppercorns, cornflour, red chilli paste and sufficient water and whisk to make a smooth and semi thick batter.
  6. Dip the lollipops in the batter, slide them into hot oil and deep-fry till golden brown. Drain on absorbent paper.
  7. Make a bed of shredded cabbage on a serving platter, keep the lollipops on them, place a bowl of schezwan sauce in the middle and serve hot.
