Paneer Stuffed Potato Sandwich

Ingredients

  • ½ cup paneer, cut into cubes
  • 3 medium potatoes, peeled, boiled and mashed
  • 1 teaspoon red chilli flakes
  • 2 tablespoon fresh coriander leaves, chopped
  • ¾ teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • 1 small onion, chopped
  • 1 small tomato, chopped
  • 1-2 green chillies, chopped
  • 1 teaspoon coriander powder
  • ¾ teaspoon red chilli powder
  • 1 teaspoon chaat masala
  • 2 teaspoons oil + for shallow frying
  • Bread crumbs for coating
  • Corn starch slurry as required
  • 4 bread slices

Method

  1. In a bowl, add the potatoes, red chilli flakes, 1 tablespoon coriander, garlic powder, onion powder, and salt. Mix well and keep aside.
  2. Heat oil in a non-stick pan, add green chillies, and cook for 30 seconds. Add onion, tomato and mix well. Add salt and sauté. Cook till the tomatoes are pulpy.
  3. Add coriander powder, red chilli powder, and chaat masala. Cook for a minute.
  4. Add little water and cook for a minute. Add paneer, salt and remaining coriander. Mix well and set aside.
  5. Place a portion of the paneer stuffing on one slice of bread and place bread on top. Cut the sandwiches in half.
  6. Dip the sandwich halves in the corn starch slurry one at a time and gently squeeze the excess liquid and keep aside. Coat with bread crumbs.
  7. Heat sufficient oil in a non-stick pan, place the prepared sandwich and shallow fry till golden and crispy. Drain on an absorbent paper.
  8. Serve hot along with ketchup.
