Ingredients list for Parmesan Potatoes

  • 25-30 Banby Potatoes parboiled with skin and halved
  • 2 tablespoons Parmesan cheese powder
  • 3 tablespoons Extra virgin olive oil
  • 1 medium Onion finely chopped
  • to taste Salt
  • 1 teaspoon Crushed red chillies
  • 1 teaspoon Dried mixed herbs
  • 1 tablespoon Refined flour (maida)
  • 1 bottle Arrabiata sauce

Method

  1. Preheat oven to 180°C. Heat 1 tbsp extra virgin olive oil in a non stick pan. Add onion and potatoes and mix. Add salt, crushed red chillies, dried mixed herbs and mix well and cook for 1 minute. Add refined flour and toss.
  2. Spread the contents of 1 bottle arabiatta sauce in a baking dish evenly. Add 2 tbsps parmesan cheese powder to the potatoes and mix well.
  3. Put these potatoes over the sauce in the baking dish and spread evenly. Sprinkle the remaining parmesan cheese powder over them. Bake in the preheated oven for 20 minutes. Drizzle remaining extra virgin olive oil over and serve hot.
