Penne Ala Vodka

A creamy, spicy vodka penne tossed in a rich tomato-garlic sauce with a hint of heat and finished with fresh cream. This is Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 200 grams penne, boiled
  • 4 tablespoons vodka
  • 1 medium onion
  • 1 inch celery
  • 1 tablespoon olive oil
  • 4-5 garlic cloves
  • 1 cup chopped tomatoes
  • Salt to taste
  • 1 teaspoon red chilli sauce
  • ½ teaspoon crushed black peppercorns
  • 2 tablespoons fresh cream

Method

  1. Roughly chop onion. Chop celery. Heat olive oil in a non stick wok and add onion and celery. Crush garlic cloves and add and sauté.
  2. Add tomatoes and mix. Add salt, chilli sauce and crushed peppercorns and mix. Add 2 tbsps vodka and mix well and cook till the tomatoes soften. Transfer into a bowl and allow it to cool slightly.
  3. Transfer into a mixer jar and blend into a puree.Put the pasta in the wok, add the puree and mix well.Add remaining vodka and mix. Add cream and mix and cook till the penne gets heated through. Serve hot
