Penne With Pepper Coulis

Ingredients

  • 300 grams penne, boiled
  • 1/2 cup pureed yellow bell pepper
  • 1/2 cup pureed red bell pepper 
  • 1 yellow bell pepper, roasted, peeled and cut into strips
  • 1 red bell pepper, roasted, peeled and cut into strips
  • 4 tablespoons extra virgin olive oil
  • 4 garlic cloves,chopped
  • 60 grams shallots, peeled and halved
  • 8 fresh basil leaves
  • Crushed black peppercorns to taste
  • Salt to taste
  • 150 grams goat cheese

Method

  1. Heat 2 tbsps extra virgin olive oil in a non stick pan, add garlic and sauté for few minutes. Add shallots and sauté.
  2. Add roasted bell pepper strips and sauté for a few minutes. Tear basil leaves and add the mixture.
  3. Add red and yellow bell pepper purees and mix well.
  4. Add boiled penne and crushed black peppercorns and mix well.
  5. Add remaining extra virgin olive oil and salt and mix well.
  6. Garnish with goat’s cheese and serve.
