Peri Peri Chicken An African chicken delicacy – spicy and bursting with flavour. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 06 Mar 2019 in Recipes Course New Update Main Ingredients Chicken legs, Olive oil Cuisine Other Cuisines Course Main Course Chicken Prep Time 4-5 hour Cook time 26-30 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Non Veg Ingredients list for Peri Peri Chicken 500 grams Chicken legs + 3 tablespoons Olive oil 1 teaspoon + ¼ cup 5-6 Fresh red chillies 6-8 Garlic cloves 1 medium Onion 2-3 Fresh parsley sprigs 2-3 Fresh oregano sprigs 1 teaspoon Paprika powder to taste Salt 1 tablespoon Red wine vinegar 2 tablespoons Lemon juice 1 teaspoon Crushed black peppercorns to serve French fries 1 tablespoon Butter to serve Steamed corn on the cob Method Preheat oven to 180º C. Heat 1 teaspoon olive oil in a non-stick pan, add chillies and garlic. Roughly chop onion and add to the pan and cook for 4-5 minutes. Take it on a plate and cool. Grind the prepared chilli mixture, parsley, oregano, paprika powder, salt, red wine vinegar, lemon juice, crushed peppercorns, 3 tablespoons olive oil to a smooth paste. Make incisions on the chicken, add the ground paste and rub the spices over chicken. Keep in the refrigerator for 3-4 hours. Place the marinated chicken on a baking tray, put the tray in the preheated oven and bake for 15-18 minutes. Place French fries on a serving plate. Heat butter in a non-stick pan, place corn on the cob and sauté till brown and done.
